Anything Nippon Ichi
During the reign of the Playstation 2, a quirky new genre spun off from the RPG fold: the completely insane strategy/RPG. The gameplay itself was nothing new (Shining Force, Final Fantasy Tactics), but the way it was presented was what set these games apart. Bright, colorful, full of crazy humor and bizarre characters, games like Disgaia and La Pucelle Tactics offered something new to fans of huge quests and turn-based action.
More a series of cult hits than breakout blockbusters, these games still helped define the later years of the PS2's RPGs.
Now that I think about it, a tactics-style game over Xbox Live, where players control opposing forces, would totally kick ass.
Shining Force
Not EXA, or NEO, or whatever other offshoot action-RPG SEGA has up their sleeve. I mean a new, original, return-to-the-roots Shining Force. 'Nuff said.

Note: In a pinch, a remake of Shining Force III, with all three episodes combined, would be acceptable.
Honorable Mentions
Some RPG games that should really see new versions:
Shenmue
Panzer Dragoon Saga
Chrono... anything, really
Oasis
Skies of Arcadia
Ok, I'm done dreaming for now. I'm curious if anybody out there agrees / disagrees with the titles on this list, or if anybody has an old fave they'd love to see given new life on the 360.
